Vitam R lovers, you may notice our most recent batch of Organic Vitam R Yeast Extract looks slightly different with visible white 'swirls'. We would like to inform you that this completely natural and a simple by-product of the manufacturing process.

The white shades are caused by residues of the yeast cell walls. These are completely harmless to the consumer, both microbiologically as well as physically.

To produce the yeast extract, yeast cell juice is extracted from the yeast cell walls. To do this, the cell walls are first opened autolytically (i.e. by themselves, with the naturally contained enzymes), and the cell walls are ejected by means of centrifugal force. The cell juice is initially liquid, before being is thickened into a spreadable paste.

With organic yeast, centrifugation behaves somewhat differently than with conventional yeast, which is why a few cell walls always remain in the extract. While these appear usually as white dots, and during transport these dietary fibres can shift inside the jars, appearing as swirls.
